Thai Peanut Noodles
Ingredients:
- 8 ounces of noodles (such as udon or rice noodles)
- 1/4 cup peanut butter
- 2 tablespoons soy sauce
- 2 tablespoons lime juice
- 1 tablespoon honey or maple syrup
- 1 clove garlic, minced
- 1/2 teaspoon grated ginger
- Optional toppings: chopped peanuts, sliced red bell pepper, chopped cilantro
Instructions:

Cook the noodles according to the package instructions until tender. Drain and set aside.

In a bowl, whisk together the peanut butter, soy sauce, lime juice, honey (or maple syrup), minced garlic, and grated ginger until well combined and smooth.

Add the cooked noodles to the sauce and toss to coat them evenly.

Serve the noodles warm or chilled. Garnish with chopped peanuts, sliced red bell pepper, and chopped cilantro for added flavor and crunch.
